50th Post

Happy 50th Post 
In the Bean Thyme!
Well, it's official...this post marks my 50th blog post! Thank you to all of my lovely followers for reading my posts over the year (one year blogiversary is coming up soooon)! I appreciate it more than you know and look forward to the next 50!


This morning started off like any other.  I got up and gave myself a few minutes to wake up before deciding what to have for breakfast.  Although, I really didn't have to think about it since I decided last night after dinner :)  


I changed it up a little bit though.  Mango, raspberries, oikos greek yogurt and Love Crunch red berries and chocolate granola! scrumptious!

After hanging around the apartment for a few hours, I got ready to meet my friend, Alyssa at the mall.  We spent a couple of hours wondering around drooling over shoes, clothes...all of those fun things! I only bought shampoo even though I was on the search for a summer dress!


After I got home I whipped up a quick lunch.  Amy's Texas Burger, caramelized onion hummus from Costco (YUM), celery and acocado.


I spent the rest of the afternoon rearranging our bedroom...and freezing fruit for a cool treat! Have you ever tried frozen grapes? If not, try it...seriously...do it NOW!


After Francis got home from work I put together a repeat from last night.  Romaine hearts, red peppers, grilled chicken breast and yogurt ranch dressing.  Topped off with freshly ground pepper!

Our plans for the night include a trip to the gym and perhaps the grocery store to pick up a few things for breakfast!

Bubblin' Bubbles


Below is a picture of a smoothie I whipped up after my workout this afternoon!  I added 2 cups of baby spinach, 1 frozen banana, ~1 1/2 cups almond milk and 1/2 scoop of Vega Vanilla Chai protein powder.  Blended up until smoooooooooth!



slurp slurp slurrrrrpppp....it was good! Check out those bubbles!


Dinner came in the form of a chicken salad.  I grilled a chicken breast with salt, pepper and garlic powder.  I put together a salad of romaine hearts, red and green bell peppers and yogurt ranch dressing. Chicken on top.  I apologize for how unappealing this meal looks..I had already started eating it when I realized I forgot to snap a picture!


Good thing I remembered ;) This was a very satisfying, delicious meal! I am going to have a little bit of greek yogurt and blueberries for dessert!

Love Crunch

Good morning world! Did you have a nice weekend? I know I sure did...It involved working out, grocery shopping and lazing around...and I wouldn't have had it any other way.  I desperately needed the rest...and guess what? This morning I got up at....wait for it...10:00 AM!!!!!!! Can you believe it? I know I can't.  I woke up a few times in the early hours of the morning but after Francis left for work at around 8:00 am I was completely zonked and didn't wake up until much later.  Normally I hate getting up late because I feel like I have lost the entire day...and maybe I have lost a chunk of the day but that's okay because I know I really needed the rest and it is very important to listen to our bodies! They are smart machines ;)

When I got up I immediately put together a simple breakfast of my favourite yogurt by Danone: Oikos 0% Greek Yogurt, topped with raspberries, blueberries and delicious chocolate and red berries Love Crunch Granola!


Definitely picked this big boy up at Costco this weekend...such an amazing deal! ~$7.49 for a giant bag! These bags are generally around $6.00 for a small bag so I was very happy to find this deal! The last bag I bought was the Carrot Cake, which was absolutely AMAZING! I am definitely going to be buying that one again! I just thought I should give the other flavours a try...I'm so nice ;)

After I ate this wonderful breakfast...I put on a pot of coffee all for myself :) I brewed this new flavour of coffee I picked up at Murchie's in Victoria, BC a couple of weeks ago! I am always on the search for a perfect flavoured coffee and this one definitely delivers.  It smells like a rich caramel/brown sugar mixture and has a hint of the same delicious flavours! Such a yummy treat!  


Murchie's offers so many delicious flavoured coffees, so I would definitely urge you to check our their website if you are a flavoured coffee lover like me!


Served in one of my favourite mugs made by James Pottery located on Quadra Island, BC.  I became familiar with their work when I was working at the Campbell River Art Gallery a few years ago! They do absolutely amazing work...I am a huge pottery lover :)

Black Bean Brownie Cupcakes

Don't let the name fool ya.  These cupcakes are fabulous!  I was perusing the internet a few days ago (surprise surprise) and came across this recipe for black bean brownies that looked very promising.  Now, I know what you're thinking...black beans IN brownies? That can't be good...Trust me...I felt the same way...but I have been seeing recipes like this one all over the place for quite some time now so I figured today was the day to try it out for myself and I am so happy I did.


These little gems are chocolatey with the traditional brownie texture, with just a hint of sweetness, which I actually prefer over the traditional brownie. Plus, they are Dr. Oz approved...that's got to mean something right?


Black Bean Brownie Cupcakes


Ingredients:



1 (15 oz.) can black beans, drained and rinsed (I used Eden Organic)
1/2 cup agave syrup (I used about half agave and half honey)
1/2 cup self-rising flour
1/2 cup egg whites
1/4 cup unsweetened cocoa
2 tbsp vanilla
1 tsp baking powder
6 tbsp mini semisweet chocolate chips (I used Enjoy Life semi-sweet mini chips)

Cream Cheese Icing:

6 oz light/fat free cream cheese
1/4 cup agave/honey/liquid sweetener of choice (I used honey)
2 tbsp vanilla
2 tbsp melted chocolate chips (I used Enjoy Life)






For the cupcakes...preheat oven to 350 degrees Fahrenheit.  Put all ingredients, except the chocolate chips, in your food processor and blend on high until nice and smooth.  Scrape down the sides and blend again for 20 seconds or so.  There should only be very small black flecks in your mixture from the beans.  This won't have any affect on the taste of your brownie.



Transfer to a medium sized bowl and mix in the chocolate chips.



Now, you can either bake them in a 8 by 8 baking pan or you can do like me and make 2 dozen mini brownie cupcakes :)  Put in the oven for 20 minutes, take out and cool...or shove in your mouth immediately...not that I did that or anything...




It's just enough for 2 little bites, or one large bite and satisfies your chocolate/sweet tooth in a matter of seconds.  




With a little smear of icing on top and you've got yourself one heck of a treat!  Enjoy with an afternoon tea, after dinner dessert or just whenever that craving strikes!

For the icing...add all ingredients into a large bowl and mix with an electric mixer until smooth.  I haven't iced my cupcakes yet, but after I do I think I will put them in the freezer for safe keeping and take one or two out whenever I feel the need!  It's nice to know I have a delicious healthy treat in the freezer just waiting for me :)

Okay...go ahead...you know you want to experiment with these babies ;)

Kale Lentil Soup

I made this delicious soup last night for quick meals for the busy week ahead.  It is absolutely delicious.


Kale Lentil Soup

6 cups veggie broth
1 1/2 cup lentils
1 cup chopped onion
4 carrots
4 cups of kale
1 tsp thyme
1 tsp poultry seasoning
salt and pepper

Cook the lentils, and onions in the broth for about 20 minutes.  Add the carrots and chopped up kale and sprinkle about 1 tsp of thyme and poultry seasoning.  Add salt and pepper to taste.

Happy Victoria Day

Happy Victoria Day to all my fellow Canadians!

I know it has been a long time since my last post.  Been a busy busy bee.  I have been on my practicum at an Elementary School and any of your teachers/student teachers out there...you can relate to the early mornings, late nights of planning and prepping for the next day.  I am NOT complaining what-so-ever though because I am absolutely in love with it.  I never want to leave the class I am in right now I just love them all so much.  It is going to be an extremely emotional goodbye...which I don't want to think/talk about right now :)

Onto what this blog is really about...FOOD!

There have been a few changes in my diet lately...one being that I've started to incorporate chicken into my diet.  That being said, it is local and organic and hopefully had a very happy life.  My body just felt like it needed meat about 2 months ago so I decided to buy chicken.  It was extremely weird eating meat again but I think my body needed it because it was very happy.  I have never been a lover of potatoes or rice or anything that carby so becoming a vegetarian was a little bit tricky.  It wasn't difficult...I didn't really miss the meat...I just didn't know how to cook many vegetarian dishes.  I had to be very creative in the kitchen, which was a lot of fun.  I learned so much and I will continue to experiment with different vegetarian dishes, however, I will be also be making meals that include chicken.  I'm not saying that I will be eating meat a lot or for the rest of my life but this it what I am happy doing right now.  I don't think we should deny our bodies what we feel they need so I am not going to do that.  I am also not going to give myself a label as a vegetarian or vegan because I feel like that is very restrictive.  I will eat what I what and feel I need whether that is vegetarian, vegan or if it includes meat.

Another reason I wanted to start eating chicken again was because I was not feeling satisfied by any of the vegetarian meals that I was eating and eating so many beans and legumes were causing me to have severe bloating and it was really uncomfortable.  I think that may have been that I was also eating too much of these things to try to satisfy my hunger or desire for something else, which never really seemed to work.  Luckily meat is extremely satisfying so I have really been enjoying that part.  After dinner I am not thinking about what to have for dessert or wanting a bowl of cereal. Tea seems to work just fine...most of the time :)  I was definitely consuming some unnecessary calories trying to satisfy something but it didn't really work.  Sometimes it did, but most of the time it didn't.

Today I decided to have a serving (1/3 cup) of scottish oats.  I realized that my portion size for oats was completely wrong.  I was never measuring but I think I was using around 1 cup, which is sooo much.  Now I am sticking to what an actual portion is and having a side of fruit.

I had a beautiful honeydew melon on the side.  1 serving of chocolate PB2 on top.  I decided not to post the picture I took because it was really really terrible.  I'll show you the one from lunch instead!


Amy's California Veggie burger, green peppers, carrots, and 1/4 of an avocado. Mmm...so so yummy!

Tonight I made a lentil soup, but I forgot to take a picture.  I'll try to remember to tomorrow.

Before I go I want to show you something I am so excited about/proud of!


I am working on a Science unit in my grade 3 class on plants.  These are the beans we planted 2 weeks ago from seed.  I was nervous they wouldn't grow very quickly but I was seriously wrong.  They sprouted up so quickly!! The kids are so interested and excited by them, which is awesome!

Market Sunday


This morning, Francis and I got up nice and early to start our day.  We ate a quick breakfast and headed downtown to grab a coffee and walk around the inner harbour (touristy, I know, but we haven't done it in such a long time that we figured it would be really nice, especially it being such a beautiful day).


I had a bowl of banana oats, topped with some PB 2.  Francis had eggs and toast. 

Downtown, we checked out the Sunday Market in Bastian Square and wow, was I impressed.  It has definitely expanded since the last time I was there.  A lot more fresh, local produce, which I was so excited about.  I think I might have even done a little hop out of happiness!  I could have taken one of everything home but because a lot of it is pricey, I had to be selective.


We picked up some pesto...


 Dried Apple Snaps, which aren't chewy like dried apples, they are crunchy like chips.  Ingredients: Okanagan Apples. Perfect! Francis and I are going to savour these because they were extremely pricey. Definitely worth it though.  We also bought an organic cucumber, organic apples and raw, creamed honey (that one was for Francis).


On the way home we stopped at Fairway to grab a couple other things to put together lunch.  We had tacos! Mexican veggie ground round, black beans, lettuce, grape tomatoes, red onion, avocado, cilantro and salsa topped on corn tortillas made in the Comox Valley.  They were delicious.

Now I'm off to do some more planning for the week of teaching ahead.  I'm teaching a grade 3 class and loving it but man is there a lot of prep.
